Chicken Under a Brick
Ingredients
• 2 large Chicken Breasts, skin on
• A few sprigs Fresh Rosemary
• 2 large Garlic Cloves minced
• 2 Lemons
• 2 Tbsp. Olive Oil
• Salt & Black Pepper
• Bricks or heavy weights wrapped in foil
• Cast iron skillet
Instructions
1. Wash and dry chicken breast. Pound thicker side of chicken breast with the palm of your hand to create even thickness all throughout. Trim off some fat if necessary but leave most for flavor!
2. Mix garlic, olive oil, & salt and pepper to taste in small bowl.
3. Spread this mixture on top of and under the skin of both Chicken breasts. Place sprigs of rosemary under the skin.
4. Place chicken, skin side down, in hot cast iron pan on the stove top (medium/high heat).
5. Place parchment paper on chicken and press bricks onto chicken and parchment paper to promote even cooking. Cook for 5-7 min until skin is nice and crispy.
6. Take off brick and parchment and flip over chicken breasts. Add quartered lemons to the pan and place in the oven 400 for an additional 25 to 35 min, until a meat thermometer reads 160 F when inserted into thickest part of the chicken breast
7. Salt and squeeze lemon over Chicken and enjoy!!
