Rosemary & Lemon Salmon Fillets

SIMPLE SALMON FILLETS ROASTED OVER A BED OF ROSEMARY AND SLICED LEMONS

Ingredients

  • One large salmon fillet

  • Salt and Pepper

  • A splash of olive oil

  • Lemons, sliced about 1/4 inch thick

  • 5 Rosemary or fresh Thyme sprigs - about 5 inches long, optional

  • Piece of aluminum foil , 6” longer than the piece of salmon

  1. Preheat oven to 450.

  2. Place a piece of foil down that is 6” than the piece of the fillet.

  3. Place salmon on center of foil, skin side down, sprinkle salt, pepper and olive oil. Top with thick slices of lemon.

  4. Seal the foil completely, place on a cookie sheet and place in preheated oven. Set timer for 12-15 minutes. The timing may very slightly depending on the thickness.
