Parmesan Chicken

Ingredients

  • 1/2 cup unsalted butter

  • 1 stick

  • 1 clove garlic smashed

  • 3/4 cup panko (or bread crumbs)

  • 1/2 cup Parmesan cheese

  • 1 clove minced garlic

  • 1/4 teaspoon salt

  • 1/4 teaspoon roughly ground black pepper

  • 6 boneless skinless chicken breasts

  1. Melt butter and smashed garlic in oven proof baking pan at 300.

  2. Blend parmesan, garlic, salt and pepper, in a shallow bowl. 

  3. Coat chicken in melted butter, sprinkle lightly with salt and pepper, then toss in crumb mixture. Lay in single layer in remaining butter in pan. 

  4. Increase oven temp to 350. Bake until tender, about 30 minutes.🌟

    When frozen, they require an additional 15-20 minutes in the oven. Pescatarian? Substitute a delicate white fish for the chicken, cooking time will be less. Serve with a squeeze of lemon 🍋
